Brie is the best gold purchased cheese available (save the ones sometimes available from Ronza). It is used for hunting in the higher areas. Hunters almost always use this cheese in the Training Grounds if they don't want to pay for SB+. It is also frequently used in the lab due to it's pungent smell.
Brie can be converted into Radioactive Blue using a Radioactive Blue Cheese Curd Potion or Greater Radioactive Blue Cheese Curd Potion.
